I told Job we were having chickpeas for lunch and he said,
I get why they are called chickpeas. Because once the outside layer is gone they do look like little cheeks :) (he thought they were called cheekpeas hehe. I could just die, that man is so cute :)
Anyways, here 'tis for your eating pleasure:
Tuna and Chickpea Salad
- 1 (5 ounce) can tuna, drained
- 1 (16 ounce) can chickpeas (garbanzo beans), drained
- 1 (2.25 ounce) can black olives, chopped (optional. Job doesn't like 'em but I do)
- 1/4 cup chopped fresh parsley
- 1/2 red onion, chopped
- lemon, juiced
- 1/4 cup crumbled reduced-fat feta cheese, or more to taste
- salt and ground black pepper to taste
Directions
- Stir the tuna, chickpeas, olives, parsley, red onion, lemon juice, and feta cheese together in a bowl. Season with salt and pepper.
Forgive the messy bowl. Any food blogger would be horrified ;) But this is really is just a "throw and go" recipe which I like. |
