Dinner last night: Started with delicious fresh homemade roasted pepper and corn cream soup then baked lemon-lime tilapia on a bed of rotini pasta with fresh oven roasted vegetables.
Dinner tonight: microwave popcorn.
Hm.... inconsistency going on here? I chock it up to Job being gone tonight. When we are together we love, love, love to cook all sorts of delicious things. But I have little motivation to cook anything decent when it is just myself. What am I going to do when he starts working evenings?!
